I notice most of the updates relate to ie8 which I don't use so I may get away without installing them. I have rebuild my computer 4 times now and can't face doing it again but am worried about not getting the critical updates. I have had to do 2 separate system restores is past few days and have deliberatley NOT installed IE Update 975544 as my system was locking.

I also deleted from startup some Apple services (bonjour, ITunes helper etc).

Now I have a stable system - I dont know if they're related to your problem or if they 'fixed' my lockups, but now, if I leave my PC for 5 minutes after booting on, all is fine.

Everything works fine until the computer wants to install updates.

I can't switch into safe mode, safe mode with networking, safe mode with Command Prompt and Last Known good configuration.
